HUNTSVILLE, Ala. (TENNESSEE VALLEY LIVING) - After battling and eventually beating cancer, a local woman’s health journey has led to the creation of a restaurant that’s garnering national recognition!
Vujee Vegan CEO & Owner Nikia M. Lightfoot stopped by the kitchen to show off what’s coming to the menu in 2026, which includes plant-based breakfast food!
She shared her recipe for making the Vujee Vegan Tofu Scramble.
Ingredients:
- 16 oz Organic Super Firm Tofu
- 2 tbsp Nutritional Yeast
- ½ tsp Turmeric
- ¼ tsp Garlic Powder
- ¼ tsp Salt
- ½ tsp Black Pepper
- 1 ½ tsp Vujee Vegan Secret Blend
- ¼ cup Onions
- ¼ cup Green Bell Pepper
- ¼ cup Red Bell Pepper
- 2 tbsp Jalapeño (seeded)
- 1 tbsp Unsweetened Plant-Based Milk (almond, soy, oat)
Directions:

- Crumble tofu in a bowl.
- Add seasonings to the tofu and mix
- Heat the skillet and add 2 tbsp oil (vegetable or olive oil).
- Add onions, green bell pepper, red bell pepper, and jalapeño to the skillet.
- Season with salt and sauté until soft (1–2 minutes).
- Add the tofu mixture to the vegetables in the skillet.
- Cook for 3–4 minutes.
- Serve and enjoy!
