HUNTSVILLE, Ala. (TENNESSEE VALLEY LIVING) - After battling and eventually beating cancer, a local woman’s health journey has led to the creation of a restaurant that’s garnering national recognition!

Vujee Vegan CEO & Owner Nikia M. Lightfoot stopped by the kitchen to show off what’s coming to the menu in 2026, which includes plant-based breakfast food!

She shared her recipe for making the Vujee Vegan Tofu Scramble.

Ingredients:

  • 16 oz Organic Super Firm Tofu
  • 2 tbsp Nutritional Yeast
  • ½ tsp Turmeric
  • ¼ tsp Garlic Powder
  • ¼ tsp Salt
  • ½ tsp Black Pepper
  • 1 ½ tsp Vujee Vegan Secret Blend
  • ¼ cup Onions
  • ¼ cup Green Bell Pepper
  • ¼ cup Red Bell Pepper
  • 2 tbsp Jalapeño (seeded)
  • 1 tbsp Unsweetened Plant-Based Milk (almond, soy, oat)

Directions:

  • Crumble tofu in a bowl.
  • Add seasonings to the tofu and mix
  • Heat the skillet and add 2 tbsp oil (vegetable or olive oil).
  • Add onions, green bell pepper, red bell pepper, and jalapeño to the skillet.
  • Season with salt and sauté until soft (1–2 minutes).
  • Add the tofu mixture to the vegetables in the skillet.
  • Cook for 3–4 minutes.
  • Serve and enjoy!
