HUNTSVILLE, Ala. (TENNESSEE VALLEY LIVING) - What’s a New Year’s Eve party without some great finger food to enjoy as you wait for the clock to strike midnight?

Endless Catering has evolved from a local small startup into a premier culinary team serving Alabama, Tennessee, Georgia, and Arizona, renowned for bold flavors and immersive guest experiences for events of all kinds.

Owners Sarah Buxbaum and Jason Gardner stopped in the kitchen to make three appetizers: Raspberry Brie Bites, Brie Pear Honey Crostini, and Aloha Poke Bites!

The recipes for each bite are as follows:

Brie, Pear, & Honey Crostini

Ingredients:

  • Sliced baguette
  • Double cream French Brie
  • Pears, thinly sliced
  • Fresh thyme
  • Freshly ground black pepper
  • Honey

Instructions:

  1. Slice the baguette, brush lightly with olive oil, and bake at 500°F for 5 minutes.
  2. Warm the Brie in the oven until soft and spreadable.
  3. Spread warm Brie on each toasted baguette slice.
  4. Top with thinly sliced pear.
  5. Finish with a drizzle of honey, a sprinkle of fresh thyme, and a touch of black pepper.


Raspberry Brie Bites

Ingredients:

  • Fresh raspberries
  • Double cream French Brie
  • Small tart shells
  • Bourbon caramel sauce
  • Powdered sugar

Instructions:

  1. Warm the Brie in the oven for a few minutes, until it is soft and gooey.
  2. Place warm Brie into each tart shell.
  3. Top with a fresh raspberry.
  4. Drizzle bourbon caramel sauce over the top.
  5. Finish with a light dusting of powdered sugar.


Aloha Poke Bites:

Ingredients:

  • Fresh ahi tuna, cubed
  • Fresh pineapple, diced
  • Fresh jalapeño, thinly sliced
  • Fresh cilantro, chopped
  • Marinade (to taste): soy sauce, garlic, ginger, toasted sesame oil, rice vinegar, sesame seeds, cilantro 
  • Sesame baskets, sesame crackers, or Everything Bagel crackers 

Instructions:

  1. In a bowl, mix the ahi, pineapple, cilantro, and marinade ingredients.
  2. Scoop the poke mixture onto sesame baskets or crackers and serve immediately.
  3. Add a jalapeño slice on top.
