Apple Pancake Dippers (Amber O'Shields)

The recipe is as follows:

1 cup Birch Benders Organic Classic Pancake Mix

• ¾ cup water (or per package instructions)

• 1 apple (Honeycrisp, Fuji, or Gala recommended)

• ½ tsp cinnamon

• 2 tbsp sugar

• Syrup, for dipping

• Butter or oil, for greasing the pan

Instructions:

  1. Prepare the batter
    1. Mix the pancake batter according to package instructions.
    2. Do not overmix; a slightly lumpy batter helps it stay thick and cling to the apples.
    3. If the batter feels thin, let it rest briefly to thicken.
  2. Slice and prep the apples
    1. Slice the apple into ¼-inch thick rounds.
    2. Remove the core from each slice using a small cookie cutter or knife.
    3. Pat the apple slices dry with a paper towel.
    4. Removing excess moisture helps the batter adhere evenly.
  3. Dip and cook
    1. Heat a greased pan over medium heat.
    2. Dip each apple slice into the batter, coating both sides.
    3. Let excess batter drip off before placing it in the pan.
    4. Cook for 2–3 minutes per side, until golden brown and cooked through.
  4. Make the cinnamon sugar
    1. In a small bowl, mix the cinnamon and sugar.
  5. Coat and serve
    1. While warm, toss the apple pancake dippers in the cinnamon sugar.
    2. Serve immediately with warm syrup for dipping.
