The Veggie's Chef Adyre talks vegan eats that'll be a hit this season

MADISON, Ala. (TENNESSEE VALLEY LIVING) - Cookout season is here, but for the people on a plant-based diet, sometimes you may feel like you can’t enjoy it to the fullest due to your food restrictions. You can put those worries to rest, because The Veggie is here to help!

Owner and Head Chef of The Veggie, Adyre Mason, stopped by the kitchen to share some vegan-friendly dishes that will be a hit for the summer!

The recipes for the three dishes are as follows:

Chunky Potato Salad

Ingredients:

  • 1 package of microwavable potatoes by The Little Potato Co. + seasoning packet
  • 2 tbsp of white vinegar
  • 1/2 tsp salt
  • 1/2 tsp of black pepper
  • 1/4 cup of dill relish
  • 3 tbsp of vegan mayonnaise, such as Hellman’s Plant Based Spread
  • 1/2 cup of vegan bacon, such as Lightlife

Instructions:

  1. Microwave the potatoes according to the package.
  2. Mix vinegar with salt and pepper and set aside.
  3. Dice half of the pack of vegan bacon and cook until it’s just crispy, about 4 minutes.
  4. Set aside.
  5. Slightly mash until the potatoes begin to split.
  6. Pour on the vinegar mixture and stir to distribute evenly.
  7. Allow to sit for 10 minutes.
  8. Add all remaining ingredients, except for the bacon. Stir until thoroughly mixed.
  9. Top with cooked bacon and, if desired, fresh dill or chives.

Red Fruit Salad

Ingredients:

  • 3 cups of cubed watermelon
  • 1 1/2 cups of pitted and halved cherries
  • 2 cups of halved strawberries
  • 1 cup of raspberries
  • 1 1/2 tsp lime zest
  • 2 tbsp fresh lime juice
  • 2 tbsp of honey or agave
  • Optional: 1 tbsp of chopped mint

Instructions:

  1. Prepare fruit and combine into one large bowl.
  2. In a separate bowl, whisk together the lime zest, lime juice, and honey or agave.
  3. Mix well.
  4. Pour the dressing over the fruit and toss to coat well.
  5. Optional: finish with a fresh mint garnish.

The Perfect Plant Bratwurst

Ingredients:

  • 1 package of Beyond Meat brat original sausages
  • 1-2 tbsp of light olive oil or oil of choice
  • 1 pack of vegan-friendly rolls like Bunny brand Brat & Sausage Rolls
  • 4 tbsp of spicy or stone-ground mustard
  • 1 cup each of red bell pepper and red onion
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper
  • 1/2 tsp salt

Instructions:

  1. Cook the Beyond Meat sausages on the grill or in a grill pan according to the package instructions, but first coat them completely with oil (about 1 tbsp for 4 sausages).
  2. Slice the peppers and onions and toss with the remaining oil and seasonings.
  3. Cook on the grill or in a pan until they achieve a slight char.
  4. Warm the sausage rolls, or toast if desired.
  5. Spread mustard along the insides of the roll, about 1 tbsp per roll.
  6. Place the cooked sausage on top.
  7. Add the peppers and onions.
