A packed lunch that packs a punch

Local dietician talks back-to-school mealtime priorities

Registered dietitian Elizabeth Dunne shares healthy and easy back-to-school lunch ideas

HUNTSVILLE, Ala. (TENNESSEE VALLEY LIVING) - Between getting all the school supplies, meeting the teacher, scheduling the haircut, proofreading the summer book report and ironing the first-day shirt... Packing your child’s back-to-school lunch can feel like the last thing on your priority list.

Local Dietician Elizabeth Dunne though says “the goal” of your child’s lunch isn’t for it to be insta-worthy -- it’s to fuel him for the day.

Boiled eggs can be a great option for protein. Salsa is a way to sneak in some veggies.

It’s all about variety, Dunne says, meaning less time on cutting the sandwiches into perfect little hearts and more time hitting a number of different food groups.

Pro-Tip: mix up some Greek yogurt with ranch seasoning for a healthier take on dip!
